Bruno Rutigliano, the chef and founder of the UK-based hemp pasta brand Buonissima, shares his favorite recipes.
Bruno Rutigliano grew up in a town in southern Italy, in a family sharing a passion for homemade pasta.
After moving to England 10 years ago, his visit to his home rekindled his Italian roots and first love. Good food.
Bruno spent 6 months creating the perfect recipe for him Buonissima Pasta made from hemp flour grown in his hometown and organic semolina capelli durum wheat.
The result is a vegan, gluten-free, nutritious, light, slightly nutty pasta.
But this is not the kind of pasta you eat comfortably with a coach after a long day.

Vegan and gluten free
Buonissima pasta is completely vegan and is ideal for anyone migrating to a more plant-based diet.

Bruno’s two favorite ways to serve hemp pasta on a plate are:
Chickpea soup and hemp pasta
– Hemp pasta Mezzemaniche Buonissima
– Cherry tomatoes
-Put salt water in a large saucepan, bring to a boil, add Buonissima Mezzemaniche (about 70g per person) and cook for about 7 minutes.
– Prepare the sauce while the pasta is being cooked. Place the cooked chickpeas in a large bowl and boil with garlic and rosemary for 5 minutes. When soft, mash half with a fork or potato masher.
– When the pasta is al dente, add it to the saucepan, add a little pasta water and stir for about 2 minutes.
– Place in a plate and decorate with a drop of black pepper and olive oil and fresh rosemary.

– Buonissima white rice and hemp penne
– black olives
– Buonissima hemp seeds
– – Put salt water in a large pot, bring to a boil, add Buonissima penne (70g per person) and simmer for about 7 minutes.
– Prepare the sauce while the pasta is being cooked. Add about 150g of tofu, basil leaves, a few capers and a little salt to the bowl. Mix using a dip blender.
– Finely chop 10 black olives
– Add 1 tablespoon of olive oil to another pan and when hot, add 20 g of Buonissima hemp seeds until toasted.
– Serve with pasta in sauce and topped with fresh basil, olives and toasted seeds
