At Christmas, the last thing you want is to spend years mixing cocktails when there are many others on your plate. That’s why a slightly positive plan is so useful.This drink is designed to be easy and speedy on the big day of the next weekend, inspired by the bitter stuff. Blood orange for Campari
250ml Campari
1 blood orange

Drinks
15ml blood orange campari (See above and method)
125ml Prosecco
1 Twisted blood orange peel

Weigh Campari into a properly sized jar or plastic box with a lid. Cut blood oranges, skins, and everything else into eight wedges, soak them in Campari, seal them, and put them in the refrigerator overnight for infusion.

The next day, finely grind it in a jug, pour it into a clean jar, seal it and store it in the refrigerator. Store in the refrigerator for at least 3 days.

To make a drink, pour blood orange Campari into champagne flutes, top with prosecco and stir gently. Decorate and serve blood orange peels.
