SWhen I go home after a long day, I just know that there is no leftover in the fridge and I really shouldn’t order. And that’s when I reach out to my handy list of reliable recipes and find something easy to make that I already have the ingredients in the pantry.

Sure, it sounds simple-it’s-but until I bother to formalize it, I write it down while actually creating the recipe, and I always write down some of the same recipes over and over again. I’ve been forced to research and scroll beyond the essential “humorous” every time with anecdotes and frustrating pop-up ads. Instead, write down a brief summary on the recipe card, such as cooking time, ingredients, clear instructions, and notes about results and potential improvements, and file it for later use.

As a giant geek, I store my cards on a digital Trello board, but it can be in any format as long as it’s easy to add, browse, reorganize, and read. It is also very helpful to tag recipes based on various attributes such as meal type, common ingredients, utensils needed to make, flavor profile, etc. For example, if you want a spud, not only will it be easier to choose potato dishes, but it will also be easier to plan different meals and shop for ingredients.

So, did I go back to doing exactly what my mother did as a kid, basically in a slightly digital way? Yes. Is it worth doing? Also, that’s right. You need to remember exactly how to make the perfect omelet, and you may not have the time to clean up the rice husks on the Internet to get there.

Mama’s mashed potato and minced combo

cooking 20-30 minutes

1 kg of potatoes
500g minced meat
(Beef, pork, chicken, or a combination thereof)
salt
soy sauce
sugar
Oyster sauce
sesame oil
pepper
Chopped garlic
1/2 cup or less of milk
Option: Shallot

Make mashed potatoes (chopped potatoes, boil for 20 minutes or cook in a pressure cooker for 6 minutes, season with milk and mash). Save it.

Fry the garlic and mince it over medium heat. When one side is browned, stir to continue cooking the uncooked side.

Season with soy sauce, sugar, sesame oil and pepper. Cook until all the meat is properly browned and season.

Serve by adding a nice layer on top of the potato mash (the juice will soak in the mash and make it even nicer). Add sliced ​​shallot if you are interested.
