An exhibition exploring recipes for Heston Blumental’s mock turtle soup will be staged by the Victoria & Albert (V & A) Museum.
Inspired by Lewis Carroll’s Alice’s Adventures in Wonderland Mock Turtle character, the 54-year-old experimental chef has updated the popular Victorian cuisine whose name was intended to be puny.
Currently, V & A is reviewing recipes as part of the upcoming Alice: Curiouser And Curiouser exhibition to see how Blumenthal devised cooking using books as source material.
This is the first time that Blumental’s work, known for its unusual dishes such as snail porridge, has been exhibited in the museum.
The display in the Reimagining Alice section of the show features an immersive life-sized Mad Hatter tea party, a movie that explores the scientific process, and a 3D reproduction of cooking movements.
Created as a visual spectacle of the Michelin-starred restaurant Fat Duck’s menu, the Blumental version features a pocket watch inspired by Mad Hatter, with gold leaf when pouring hot water from a teapot. It dissolves in clear brown consomme.
Mock turtle eggs, turnip mousse, suede puree and enochi mushrooms are added to represent the caterpillar toad stool.
“The situation is unrealistic because we judge things based on what has already been said. That is why my motto is” ask everything “and Alice’s book in Wonderland. That’s why has provided an endless source of inspiration for my work.
“Discovering the use of low temperatures to reduce the liquid in mock turtle soup is a perfect example of Alice-inspired logic. The story behind it is V & A Alice: Curious and Curious. I am happy to be exhibited as part of this exhibition. “
Alice: Curiouser And Curiouser opens May 22nd and delves into the origins, adaptations and reinventions of Alice In Wonderland for over 158 years.
